J. L Hudson's Maurice Salad


Hudson's stores were the primo department store in the Detroit area for many years, and sponsored the big televised Thanksgiving Parade downtown. This is the original flagship store on Woodward Avenue. Their in-store restaurants were famous for this slightly-different spin on chef salad, all the ingredients, including the lettuce were shredded, with a unique pickle-y dressing a bit like tartar sauce.. Of course, like many other regional chains, Hudsons has been swallowed up by the Bigger Guys.

The last time I enjoyed this wonderful salad was at the Oakland Mall store some years ago. Unfortunately, the Fort Wayne Indiana didn't have a 'lunchroom". I am not sure if they still are serving the Maurice Salad at the reincarnated stores, but you can save yourself a trip to Detroit by making this. Ingredients are given per one- serving portions.

For each salad, toss 2 oz  iceberg lettuce, 1 oz each - ham, chicken or turkey, and swiss cheese, all julienned.

 Maurice Dressing: 1/2 c. mayonnaise, 1-1/2 tsp white vinegar, 1 hard boiled egg, chopped, 1 TB onion, chopped, 1/2 tsp Worcestershire, 1/4 c oil, 1/4 c. sugar-free sweet pickle or sweet pickle relish. Process in blender or food processor til smooth. Add 1/2 c sour cream, 1 tsp chives, 1/4 tsp salt, 1 TB parsley, chopped. Pulse just another moment. Chill at least 1 hour before serving. Use about 3 TB for each lunch salad.
