Key Largo Country-Style Fish


Put 2 sleeves of Ritz crackers in a zipper bag and crush with a rolling pin. Lightly spray a 9x13 pan and put half the crumbs on the bottom. Place 2 lbs white fish, such as tilapia, haddock, cod, etc...    on top  and season with salt, pepper, seasoned salt, and  chopped fresh parsley. Top with remaining crumbs and pour 2 cups  half and half over everything. (Land O Lakes fat free half and half works just fine)  After the cream has settled, pour 1 stick butter, melted, over all.   Let sit for one hour or refrigerate as long as 24 hours.   Bake in a preheated oven at 350 for about 45 minutes.
