Paula Deen's Georgia Cracker Salad


When it's late and you remember that you need to take a dish to party or picnic the next day, never fear: you have enough on hand all you need to save the day - and not have to dash to the store at midnight, although you might need to boil an egg. This is really a crazy dish but it is good and will get lots of comments! I'm not sure why this photo looks like rice, in person it's easy to tell they are cackers.

In a medium bowl, coarsely break/crush 1 sleeve of saltine crackers with your hands. Don't try for teeny pieces- big is fine. Add 1 large tomato, 3 green onions, 1 hard boiled egg, all finely chopped, and salt, freshly ground black pepper, and 1-1/2 c real ( Hellmann's!) mayonnaise.

Serve immediately. ( If taking somewhere, mix everything but the crackers in the serving bowl. Top with a layer of foil or plastic wrap- lay your sleeve of crackers on top and transport that way. Crush up the crackers and mix when its time to serve.
