Morning Glory Muffins

Terrific for brunch and lunch, and better yet for bake sales and any-day treats. The ladies at Shawnee UMC church in Lima, Ohio made these to serve with their brunches.

In a large bowl, beat 3 eggs, 1 c canola or veg oil, 2 tsp vanilla. Stir in 2 c grated carrot, 1/2 c raisins, 1/2 c chopped nuts, 1/2 c coconut, 1 apple , peeled and grated.

Mix in 2 c flour, 2 tsp baking soda, 1/4 tsp nutmeg, 1-1/4 c sugar, 2 tsp cinnamon, 1/2 tsp salt.

Spoon into greased or paper-lined muffin tins. Fill to the top.
Sprinkle with some brown sugar if you like.
Bake in preheated 350 oven for 20-30 minutes, until springy to the touch. Makes 24.
