Texas Oven- Barbecued Beef


 
Ultra-tender and delicious -- and it becomes  very  low carb if you use low carb ( "low sugar")ketchup and brown sugar substitute.  Heat oven to 350, trim any fat on the edges   & cut a 3 lb round steak* in 6-10 serving-size  pieces. Brown in a skillet in 2 TB  hot oil and transfer to a roaster or 9x13 pan. Saute   1 large onion ( large chop)  in the residual oil, then add 3/4 c ketchup, 1/2 c cider vinegar, 3/4 c water, 1 TB brown sugar, 1 TB prepared mustard, 1 TB Worcestershire, 1/2 tsp salt, 1/8 tsp pepper. Simmer 5 minutes and pour over the steak. Cover with foil or a lid and bake 2 hours or til tender. Uncover the last 30minutes if you're around.  It doesn't serve six to 8 people at my house, as the 40-year old tattered recipe says,  but it might at yours.
Enjoy the wonderful aroma as it bakes and becomes fork-tender, and in the unlikely event there is any left over, its just as good the next day in sandwiches or sliders; thicken and save  some of the sauce, if that's  on the agenda.

* Use any cut of beef that isn't fatty, and visually, at least, resembles round steak... between  one and  three  inches thick,  it could be 'swiss steak', London Broil, etc.  Of course, your  baking time will lengthen if it's really thick.
