Winner of the 1982 Chicken Cooking Contest- a $100,000 prize for Marcia Adams, of Ft. Wayne Indiana, who later became famous on PBS for her Cooking In Amish Country TV shows and several 'Amish Country' cookbooks. I had the opportunity to help her prep for a cooking demo once; she was a gracious woman with a calm, serene demeanor. Her cookbooks are superb sources for very simple, delicious dishes.
Place 4 large boned chicken breasts in a sprayed or greased baking dish. Sprinkle with salt & pepper. Top with 16 oz sauerkraut, 4 large slices Swiss cheese, and 1-1/4 cups Thousand Island salad dressing. Cover with foil and bake at 325 for 1 1/2 hours
