One of the 80's classic favorites that needs to be re-introduced! My friend Jackie's brother in law had a bakery out west that made this. Over the last 40 years I've seen it many times, and the famous southern Hummingbird cake is similar, except that it adds mashed bananas. This can't be any simpler - it takes longer to preheat the oven than to mix up the cake and frosting!
Mix by hand: 1 can crushed pineapple in syrup- not drained, 2 eggs, 2 c flour, 2 tsp baking soda, 1 tsp vanilla, 2 c sugar, 1 c. chopped nuts.
Place in a greased or sprayed 9x13 pan, and bake in a preheated 350 oven for 45 minutes. When cool frost and sprinkle with some more nuts.
Frosting: Beat 1/2 c margarine, 8 oz. cream cheese at room temperature, 1-1/2 c powdered sugar, 1 tsp vanilla.
