Drain, seed, stem and chop one 13 oz jar of pickled jalapeno peppers. Combine with 16 oz shredded cheese- your choice of cheddar or monterey jack. Place in bottom of a 9x13 pan. Beat 6 eggs well and then pour over the cheese and peppers. Bake for 20-25 minutes in a preheated 350 oven. Cool slightly before cutting into squares. Best warm but good cool too.
