This recipe makes a lot, but it's easy to cut in half
Mix 1 lb cubed Velveeta cheese with 1 can Rotel diced tomatoes w/chilies - microwave together on low until melted., stirring frequently. Combine that with 3 lbs cooked chicken - breast preferably- cut up, 1 large onion, shopped, 1 can cream of chicken soup, and1 can cream of mushroom soup. Place a medium-size bag of Dorito-type tortilla chips on the counter, and after making a small opening to prevent bursting, crush with your hands. Add to chicken mixture and mix well. Add 1 1/2 c chicken broth. Place it all in a large crock pot and top with another lb of velveeta cheese - shredded or finely cubed. Cook on high for 3 hours or low 7-8 hours.
If you don't want to use a crock pot, bake in a large casserole for 30-45 minutes until cheese is melted and entire casserole is bubbling. Serves 8-10
Good with a green salad with orange sections and avocado.
